[K-SCIENCE] Kimchi Full of Bacillus Subtilis

Kimchi, typically made from cabbage, is a staple in Korean cuisine.

It's a fermented Korean side dish loved by almost all Koreans.

Kimchi has been garnering attention from all around the world as it is known to be good for weight control and highly effective against cancer and in improving skin diseases.

"I eat kimchi every day. Kimchi is known to be good for digestion and weight control, so I am taking it as an everyday meal."


A South Korean research team has found that kimchi contains Bacillus subtilis that does the human body good.

The bacteria are strong against heat and acid, so that they can reach the stomach alive, unlike lactic acid bacteria.

Bacillus subtilis helps ensure effective digestion and improve vascular health.

Also notable is that the Bacillus subtilis was found only in the kimchi varieties that are made with red chili powder as one of the ingredients.

The bacteria is most highly proliferated when kimchi is fermented at four degrees Celsius for 12 weeks.

The Rural Development Administration plans to use the Bacillus subtilis found in kimchi in other food industry sectors.
